Fiesta Chicken with Cilantro Lime Rice

Tonight we discovered a new favorite meal. Thank you pinterest.

I am always looking for easy meals and this couldn't be more easy. If you know me, you know I love anything with black beans and corn... and anything you can cook in a crockpot. Therefore this recipe was a win win.

Fiesta Chicken

4 chicken breast (can even be frozen!)
1 can of black beans
1 can of corn'
1 jar of salsa (16 oz)
1 container of cream cheese

Place chicken, beans, corn, and salsa in crock pot. Cook on low for 4-5 hours. Shred the chicken and place the container of cream cheese on the top for 30 more minutes. Then stir all together.

Cilantro Lime Rice

2 Tbsp cilantro
1 1/2 Tbsp lime juice
3/4 tsp salt
1/4 tsp cumin
pepper to taste
2 1/4 cup chicken broth
2 Tbsp butter
1 1/4 cup of rice

Melt the butter in a pan with the rice. Add the chicken broth and the remaining ingredients. Bring to a boil, reduce heat, cover and simmer for 20 minutes.
