Italian Tilapia Casserole


4 tilapia fillets
1 cup of uncooked rice
1 bell pepper
1 onion
1 can of petite diced tomatoes
Italian Dressing
Shredded Cheese

In a sauce pan combine 1 cup of rice, 2 cups of water, and 1 tbsp of butter. Bring to a boil then simmer for 20 minutes.

On a cookie sheet covered with foil, place all 4 fillets. Bake at 425 degrees for 10-15 minutes or until the fillets become flaky.

In a skillet saute the peppers and onions until done.

Combine tilapia, rice, peppers, onions, and tomatoes into a large bowl. Add a little Italian dressing to keep the mixture together. Sprinkle the top with a little cheese. Put in the oven covered at 350 for 20-30 minutes.

I really love this recipe. The best part is that you can't even really taste the fish. This is a great alternative to chicken!!
