Parmesan Seasoned Chicken

Last night's dinner was another one of our favorites: Parmesan Seasoned Chicken. Seeing as how this is a recipe I made up, it has no official name so that is the name I just came up with for this post.

Also due to the fact that I made it.. there are no real measurements! But, let's take a stab at it!

As with most bread/coated chicken you start with a coating of flour and then a dip in eggs.

Next is the seasoning. This one of those that you just make the portions of seasonings to your little hearts desire. I start with an envelope of McCormick Grill Mates seasonings. We love the Zesty Herb and the Baja Citrus but we usually try the others too.



Use the entire envelope of seasoning. Then add a good amount of grated Parmesan cheese. And, finish the mixture off with some bread crumbs for a little more fluff to the mix. Now, the ratios we use are heavy on the seasoning because of Tyler's love of seasoning. But, I will say, it isn't too much for me either who tends to be rather wimpy on the seasonings. So, I encourage you to create your own blend!


Once you have coated your chicken, place it in a greased pan.


Cook the chicken at 375 degrees for about 20 - 30 minutes or until white throughout.

And, you have your finished product!

The best thing about this recipe is that it is relatively low in calories. We used low fat Parmesan cheese and only a small amount of bread crumbs. And, it is a WHOLE lot better for you than fried chicken so we really enjoy it!
